The Best Ever Cranberry Bliss Bars (Grain-free)

I created a paleo, copycat version of Starbucks’ CRANBERRY BLISS BARS that’s lower carb, less sugar, grain & dairy-free, yet still taste like the real deal—if not better!!

It was always my favorite around the holidays & the combination of cranberry, orange, & white chocolate is magical. And a clean version really takes them to the next level. The base is a brown sugar blondie, paired with a tangy cream cheese frosting with hints of orange, and topped with dried cranberries & white chocolate. So much amazing flavor!!

The Best Ever Cranberry Bliss Bars

A paleo, copycat version of Starbucks’ CRANBERRY BLISS BARS that’s lower carb, less sugar, grain & dairy-free, yet still taste like the real deal—if not better!!

COOKIE BAR INGREDIENTS:

  • 1 cup vegan butter, palm shortening, or grass-fed butter
  • 1 cup organic brown sugar, (packed)
  • 2 eggs + 1 yoke, (room temperature )
  • 2 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 1 1/2 cups almond flour
  • 1/2 cup cassava flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon teaspoon salt
  • 1 cup white chocolate chips
  • 3/4 cup dried cranberries

FROSTING INGREDIENTS:

  • 8 ounces vegan cream cheese, (softened)
  • 1/2 cups powdered sugar
  • 1/2 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice

GARNISH INGREDIENTS:

  • 1/3 cup dried cranberries, (roughly chopped)
  • 1-2 ounces white chocolate, (melted)

COOKIE BAR INSTRUCTIONS

  1.  Preheat oven to 350. Line a 9×13 pan with parchment paper and set it aside. 

  2. Mix together dry ingredients: almond flour, cassava flour, ground ginger, baking powder, and salt; then set aside.

  3. In a separate bowl, cream together brown sugar and butter for 2 minutes, then add eggs and mix until combined. Mix in vanilla and orange zest.

  4. Add the dry ingredients to the wet ingredients and mix until well combined. Fold in white chocolate chips and dried cranberries.

  5. Spread batter in pan and bake for 20 to 25 minutes.

FROSTING INSTRUCTIONS:

  1. Slowly mix together cream cheese and powdered sugar together for about 30 seconds, then add the rest of the frosting ingredients to a bowl and beat for 2-3 minutes. 

ASSEMBLY INSTRUCTIONS:

  1. Let bars cool completely, this will take several hours. I usually let them sit overnight before assembling.

  2. Then spread the frosting over top and cut into bars.

  3. Sprinkle with dried cranberries and then drizzle with melted white chocolate.
