Spiked Leprechaun Chow

Irish Cream-Spiked Leprechaun Chow

Irish cream-spiked "leprechaun chow" is so delicious and so easy to make! The amount of alcohol in one batch is equal to two beers so be sure to snack responsibly!

Base Snack Mix

  • 2 cups cereal of choice*
  • 2 cups plain kettle chips
  • 1 cup pretzels
  • 1 cup popcorn
  • 1 cup roasted peanuts
  • 1/2 cup M&Ms
  • 1/2 cup chocolate chips

Secret Sauce

  • 10-12 oz white chocolate
  • 1/4-34 cup Irish cream**

Coating

  • 1-2 cups powdered sugar
  1. Combine cereal, pretzels, popcorn, chips, and peanuts in a large bowl and set aside.

  2. Melt white chocolate and Irish cream over low heat and stir until smooth.

  3. Pour the chocolate mixture over the snack mix and stir around gently. 

  4. Add the powdered sugar to a ziplock bag and toss gently again until everything is well coated.

  5. Pour onto a parchment-lined baking sheet to dry for ten minutes.

  6. Then toss in chocolate chips or chocolate candies.

  7. The amount of alcohol in one batch is equal to two-three beers so make sure to keep it away from children and be sure to snack responsibly!! ENJOY

*Cereal: I used a grain-free cereal, but you can definitely use Chex or something similar.

**Irish cream: I’ve tested 14 cup, 1/2 cup, and 3/4 cup, and I prefer 1/2 cup Irish Cream. I thought 1/4 wasn’t enough and that 3/4 was too strong for my taste.
